Sourdough Biscuits

One of my favorite meals of all times is Cowboy Biscuits. Place bacon strips on a cookie sheet. Bake at the same time as the biscuits. To serve, place crispy bacon in biscuits like a sandwich. Delicious!

Evening before, mix together:
1 cup cup starter
1 cup milk
1 cup flour.
Cover and set.

12-18 hours later:
1-1/2 cups flour
1 tbsp sugar
¾ tsp salt
2 tsp baking powder
¼ tsp cream of tartar

Whisk dry ingredients together. Work in 1/3 cup of shortening.
Dilute ½ tsp baking soda in a tsp of water. Add to the wet poolish. Add dry mixture. Mix to a soft dough. Knead lightly a few times to get in shape. Roll out and cut into biscuits.

This recipe always makes 15 biscuits. (For cowboy biscuits, our family of 8 uses 1-1/2 lbs of bacon.)
